Live (unshucked) oysters can be stored in the refrigerator.
Ensure that these are loosely covered with clean, damp paper
towels or cloths to prevent them from drying out. Never store
these in air-tight containers or bags since the oysters can expire
from lack of oxygen.
Placement in the Fridge
Store live shellfish above raw meat, or poultry, so juices don't drip on them. Do not store live oysters directly on ice, since the melting fresh water may cause the oysters to expire.
Optimum storage temperature is about 3° to 4°.
The oysters, when stored properly, can keep up to 4 days, and
eaten within 1 day after shucking (as long as kept in storage
